Pork Cooked with Sugar Recipe

(Vietnamese Recipe)

Ingredients:  Serves 6-8

1-1.25 kg (2-2½ lb) pork belly or loin

2 tablespoons oil

3 scallions, finely chopped

good pinch of ground black pepper

2 teaspoons sugar

½ teaspoon salt

4 cups water

2 tablespoons fish sauce

 

Method:

Cut pork into large cubes.  Do not discard fat for this is a delicious way of cooking it.  Heat oil in a large saucepan and fry the scallions gently until golden and aromatic.  Add pork and fry, stirring, until pork changes color, then add sugar, salt and pepper and continue stirring until meat is browned.  Add water and simmer without covering pan for an hour.  Add fish sauce and continue to simmer until the pork is almost dry, taking care to stir frequently as liquid reduces or the pork may burn.  Serve with plain white rice.
