Lotus Root Pork Soup Recipe

(Canh Củ Sen Vietnamese Soup Recipe)

Ingredients:  Serves 4

500 g (1 lb) lean pork ribs

500 g (1 lb) fresh lotus root or 8 slices canned lotus root

3 scallions, trimmed

½ teaspoon salt

6 cups water

1-2 tablespoons fish sauce

 

Method:

Ask butcher to cut the pork ribs into short lengths.  Peel lotus root thinly and cut into slices.  Slice scallions, using both green and white parts.  Put these ingredients into a saucepan with the salt and water, bring to the boil, then cover and simmer for 1½ hours or until well cooked and the liquid reduced to 4 cups.  Add fish sauce to taste.  Serve with white rice.
