Chicken and Winter Melon Soup Recipe

(Canh Ga Bi Dao Vietnamese Soup Recipe)

Ingredients:  Serves 6

500 g (1 lb) chicken wings or half a chicken

1 kg (2 lb) Chinese winter melon

6 scallions

5 cups water

1 teaspoon salt

1 tablespoon fish sauce

Black pepper to taste

 

Method:

Cut chicken wings or half chicken into joints, washed and drained in a colander.  Peel melon, discard skin and spongy center with seeds.  Cut melon into bite-sized pieces.  Slice scallions.  Put chicken into saucepan with scallions, water and salt.  Bring to the boil, then cover and simmer over low heat for an hour or until liquid is reduced and well flavored.  Add winter melon, bring to the boil for one minute only.  Add fish sauce and pepper to taste.  Serve immediately, with rice if desired.

 

Note:  Peeled, sliced and seeded cucumber can be used as a substitute for winter melon.
