Sharks Fin with Red Vinegar Recipe

(Taiwanese Recipe)

Ingredients: Serves 2-4

450g sharks fin

1 scallion, sectioned to 3-inch long

3 slices ginger

1 tablespoon wine

1 cup chicken stock

Chinese cabbage

75g pork, shredded

teaspoon soy sauce

teaspoon cornstarch

2 tablespoons red vinegar, or to taste


1 tablespoon oyster sauce

1 tablespoon sugar

1 teaspoon salt

a pinch of pepper powder


Clean the sharks fin and add scallion, ginger, wine and 1 cup chicken stock to steam for 30 minutes over high heat.  Discard the leaves of Chinese cabbage and retain the stem of Chinese cabbage.  Shred the stem.  Stir shredded pork with teaspoon soy sauce and teaspoon cornstarch for a moment.  Fry shredded cabbage and shredded pork completely.  Put on the shark's fin.  Place them in a small bowl and add seasonings to steam.  Pour red vinegar in to enhance the taste while serving.
