Sesame Prawns Recipe

(Taiwanese Recipe)

Ingredients: Serves 6

12 jumbo prawns or shrimps

1 bunch bean thread noodles

4 cups oil

3 tablespoons cooked white sesame seeds

Ingredients for coating:

cup cornstarch

cup flour

Ingredients for sauce:

cup chicken broth

1 tablespoons ketchup

2 teaspoons each sugar, white vinegar

a pinch of salt

Ingredients for marinade:

egg white

1 tablespoon cornstarch

1 teaspoon each wine, sesame oil

teaspoon sugar

a pinch of salt

a pinch of pepper

Method:

Remove the head and shell from prawns leaving the tail.  Devein, rinse and drain the prawns before making a shallow lengthwise cut along the back of each; make one slit in the middle.  Marinate the prawns for about 30 minutes in ingredients for marinade.  Bring the tail down and through the middle slit.  Coat the prawns with coating ingredients.  Heat oil to 140C.  Fry bean threads until they are puffy and expanded, then drain.  Place bean threads on serving platter.  Turn burner down to low flame and wait until oil reaches a temperature of 120C, then turn the flame high.  Deep fry prawns until done, then drain.  Place ingredients for sauce in wok and bring to a boil.  Pour this onto prawns.  Prawns and sauce are then placed on bean threads.  Sprinkle sesame seeds on the very top.  Please note that Taiwanese use rice wine as a cooking wine.  Rice wine is similar in flavor to a dry white grape white.
