400g oysters
80g leeks
3 tablespoons oil
1 tablespoon each sliced
(fingernail-sized)
ginger, red chili pepper
1 teaspoon each minced spring onion,
garlic
3 tablespoons thick soy sauce
2 tablespoons (fermented) black beans
1 tablespoon wine
½ teaspoon sugar
1 teaspoon sesame oil
dash of cornstarch
dash of salt |

Method:
Use the cornstarch and salt to clean the
oysters. Remove and drain. Place in 70°C water. When
the water comes to a boil, turn off the burner and let sit.
Remove the oysters almost immediately, then rinse and drain. Cut
the leeks into pieces. Heat the wok and add 3 tablespoons of
oil. Add ginger, red chili pepper, spring onion and garlic and
stir fry until fragrant. Add thick soy sauce, black beans, wine
and sugar and bring to a boil, then stir in oysters. Sprinkle on
sesame oil and leeks, then remove to serving platter. Method for
preparing black beans is to first rinse the black beans clean, then
drain. Marinate in 3 slices of ginger and 2 tablespoons of wine
15 minutes for flavoring. Remove and drain to be used.
