Deep Fried Savory Beancurd Recipe

(Taiwanese Recipe)

Ingredients: Serves 2-3

1 pack beancurd

Deep-frying Batter (mixed well):

5 tablespoons rice flour

1 tablespoon cornflour

5 tablespoons glutinous rice flour

a pinch of five-spice powder

1 teaspoon baking powder

½ teaspoon ground white pepper

½ teaspoon table salt

Method:

Cut beancurd into cubes and set aside.  Sprinkle some salt on a dry plate.  Place diced beancurd on.  Sprinkle salt over the beancurd.  Leave it for 15 minutes.  Heat oil for deep-frying.  Dip beancurd into the batter.  Deep fry over high heat until golden and crispy.  Serve hot.  For a crispier texture, coat the beancurd in batter and wait for 5 to 10 minutes.  Then coat a second layer and deep fry over medium heat.  Sprinkle salt on beancurd for seasoning and draining water out of the beancurd.
