Beef Stomach with Red Chili Oil Recipe

Ingredients: Serves 4

225g stewed beef stomach (please

  refer to More Taiwanese Recipes below)

1 stalk cilantro

1 scallion

Seasonings:

1 teaspoon minced garlic

1 tablespoon soy sauce

teaspoon sesame oil

1 teaspoon red chili oil

teaspoon ground Szechwan peppercorn

Method:

The beef stomach has to be soft to absorb the flavor.  Chill first to make it easier to slice thinly.  Do not add too much soy sauce to the stomach when stewing, or the dish will appear too dark after seasoning.  Cut stewed beef stomach diagonally into slices.  Cut cilantro into small sections.  Mince scallion.  Combine all seasonings together and add minced scallion to mix.  Drizzle over beef stomach and let sit for 10 minutes until flavor is absorbed thoroughly, then remove to serving plate.  Garnish the cilantro on top.
