White Curry Fish Recipe

(Kiri Malu - Sri Lankan Recipe)

Ingredients: Serves 6

500g firm white fish steaks or fillets

½ teaspoon ground turmeric

1 teaspoon salt

1 teaspoon fenugreek seeds

1 medium onion, finely sliced

2 cloves garlic, finely chopped

8 curry leaves

1½ cups thin coconut milk

½ cup thick coconut milk

lemon juice to taste

 

Method:

Wash fish and dry on kitchen paper.  Rub with turmeric and half teaspoon salt.  Soak fenugreek seeds in water for 30 minutes.  Put fenugreek seeds into a saucepan with onion, garlic, curry leaves and thin coconut milk and half teaspoon salt.  Simmer gently until onions are soft.  Stir well, add fish and simmer for further 10 minutes.  Add thick coconut milk and cook for a few minutes longer, remove from heat and add lemon juice to taste.  Serve with rice and sambols.
