Dry-Fried Shrimps Recipe |
Ingredients: |
2 tablespoons vegetable oil 2 onions, finely chopped 2 garlic cloves, finely chopped 2 teaspoons salt 1 teaspoon dried flaked chili 1 teaspoon paprika 1 teaspoon cayenne pepper ½ teaspoon turmeric ½ cup (125 ml) water Juice of 1 lime (calamansi) or juice of ½ lemon 1 kg medium green shrimps, peeled and de-veined, with tails intact 50 g palm sugar, grated (available in blocks at Asian food stores – can be substituted with brown sugar) 1 tablespoon tomato sauce Cooked rice and pappadums (optional), to serve |
Method: Heat oil in a large frying pan on low. Add onions and garlic, and cook for 15-20 minutes, until onions are soft. Stir in salt, flaked chili, paprika, cayenne pepper and turmeric. Stir-fry for 1 minute. Stir in water and lime juice, then simmer, covered, for 5 minutes. Mix in shrimps, sugar and tomato paste. Simmer, uncovered, for 5 minutes, until shrimps are cooked and sauce is thick enough to coat shrimps. Serve with rice and pappadums, if desired. |
