Rempah Titek with Radish Recipe

Ingredients: Serves 4

200g small prawns

300g Chinese white radish or lobak, cut into wedges or thick slices

1 cup thick coconut cream

2 red chilies, sliced thinly

¼ to ½ teaspoon salt

1½ to 2 cups water

1 portion fried rempah titek (refer below)

 

Rempah Titek:

1 tablespoon shrimp paste or belachan

6 candlenuts or buah keras

10 shallots, peeled

 

Method:

To make rempah titek, pound or grind shrimp paste, candlenuts and shallots until fine.  Heat the oil and stir fry rempah titek for 2 to 3 minutes over medium heat until fragrant and oil exudes.  Add the water to the fried rempah titek and bring to the boil over medium low heat.  Add radish, chilies and salt; simmer for 20 to 30 minutes until radish is cooked.  Stir in coconut cream, bring to the boil and add prawns.  Simmer over medium low heat until cooked.
