Pork with Salted Fish Recipe

Ingredients: Serves 4

350g pork belly, pork with fat or chicken meat, minced

60 to 80g salted fish

1½ tablespoons ginger juice

3 teaspoons corn flour, mixed with 8 tablespoons water to form a paste

1 tablespoon cooked vegetable oil

 

Seasoning:

1 teaspoon Chinese yellow wine or hua teow jiu

½ teaspoon sugar

2 teaspoons light soy sauce

a dash of pepper

 

Method:

Remove skin and bone from salted fish; dice meat finely.  Mix with ginger juice and set aside.  Mix minced pork with seasoning ingredients.  Mix corn flour paste into the pork.  (Do not stir too much or the mixture will become firm.)  Mix salted fish in gently.  Add the cooked vegetable oil and mix well.  (Alternatively you can arrange the salted fish on top of the minced pork).  Place the minced pork on a deep plate and smoothen the top.  Steam over high heat for around 15 minutes.  Decorate with steamed carrot slices and serve with rice porridge or steamed rice.
