Crabmeat Shark's Fin Omelette Recipe

Ingredients:

4 eggs

˝ teaspoon sugar

1 teaspoon dry sherry

˝ teaspoon salt

White pepper

1 tablespoon cornflour (cornstarch)

2 tablespoons water

2 tablespoons vegetable oil

2 ginger slices

1 cup cleaned crabmeat, available from supermarkets

1 cup prepared shark's fins, available from supermarkets

1 cup fresh bean sprouts

1 teaspoon light soy sauce

A few drops of sesame oil

1 stalk scallion, chopped

 

Method:

Beat eggs together in medium bowl with sugar, sherry, salt and pepper.  Add water to cornflour to make into a paste and stir into beaten egg mixture.  Leave aside.  Heat oil in large non-stick fry pan over medium-high heat.  Fry ginger slices.  After a few minutes, discard ginger.  Sauté bean sprouts, crabmeat and shark's fins in this flavored oil.  Season with light soy sauce and a few drops of sesame oil.  Pour beaten egg over crabmeat mixture and cook without stirring until egg is set.  Garnish with scallions, stir lightly and serve immediately.
