Umba - Simmered Pork Recipe

Ingredients:  Serves 6

1 kg pork shoulder, cut into large cubes

2 cloves garlic, peeled and finely chopped

1 cup water

2 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon salt

½ cup vinegar

½ bay leaf

 

Method:

Put the pork cubes into a heavy saucepan with the rest of the ingredients and bring to the boil.  Then lower heat, cover and simmer until pork is cooked and tender.  Serve with rice.
