Pomelo Salad Recipe

(Nyonya Recipe)

Ingredients: Serves 4

3 segments of pomelo wedges

2 shallots, sliced

2 kaffir lime leaves, finely shredded

1 tablespoon roasted peanuts, coarsely chopped

1 tablespoon dried shrimps, washed and lightly pounded

2 bird's eye chilies, chopped

1 green unripe mango, julienne

½ ginger flower (bunga kantan), sliced finely

 

Dressing:

2 tablespoons kalamansi lime juice

1-2 tablespoons sambal belachan or to taste

a pinch of sugar or to taste

 

Garnish:

Mint leaves, shredded finely

 

Method:

Peel pomelo and separate the sacs into a mixing bowl.  Add combined dressing and toss in the rest of the ingredients.  Dish onto a serving plate and garnish with the mint leaves.
