Fried Cockles and Chives Recipe

(Nyonya Recipe)

Ingredients:

600 g cockles (kerang)

1 big red onion, peeled

2 pips garlic, peeled

1 fresh red chili

4 stalks Chinese chives

2-3 tablespoons cooking oil

salt and pepper to taste

 

Method:

Wash cockles well and drain.  Pour boiling water over cockles and allow to soak for 5 minutes.  remove shells and put cockle flesh into a metal sieve to wash and drain.  Cut onion into quarters.  Mince garlic.  Slice chili at a slant.  Cut Chinese chives into 5 cm lengths.  Heat pan and add oil.  When oil is hot, add onion and minced garlic.  Stir until soft.  Add cockles, chives, chili, pinch of salt and pepper or to taste.  Fry until cockles are just cooked and remove from heat.  Serve.
