Braised Pork – Porco Bafassa Carroz Recipe |
Ingredients: |
400 g pork (tenderized by hitting it with the back of a cleaver) 50 ml chicken stock 1 tablespoon coriander (cilantro), chopped finely 1 tablespoon turmeric powder 2 tablespoons Madeira (a Portuguese white wine), or any cooking wine 3 cloves garlic, peeled and chopped finely 4 shallots, peeled and chopped finely 2 sprigs scallion, chopped |
Method: Marinate pork overnight, in chicken stock, coriander, turmeric powder and wine. Sauté garlic, shallots and scallion. Add marinated pork and enough water to cover the meat. Braise for 1 1/2 hours making sure that the water does not run dry. Add more water if needed. Put the braised pork into a deep-casserole dish and bake in a preheated oven at 200 degrees Celsius for 10 minutes. Alternatively, you can stir-fry the braised pork over high flame for 1 to 2 minutes. |
