Braised Mushrooms Recipe

Ingredients: Serves 4

15-20 dry shiitake mushrooms (soaked and stem removed)

2 stalks scallion (leave whole)

1 inch ginger (smashed lightly)

1 piece chicken leg

2 pieces pork fat

2 teaspoons Chinese rose wine

 

Seasonings:

600ml chicken superior stock

˝ tablespoon sugar

some salt

1 tablespoon oyster sauce

˝ teaspoon sesame oil

 

For thickening: mixed well

1 tablespoon cornstarch

1 tablespoon water

 

Method:

Heat up a claypot.  Put in 3 tablespoons oil or lard.  Sauté ginger and whole stalks of scallion.  Add in rose wine and mushrooms, mix well.  Add in chicken leg and pork fats.  Add in chicken superior stock and sugar.  Simmer for 45-60 minutes.  Add in salt and oyster sauce, adjust to taste.  Add in thickening and sesame oil.  Remove ginger, scallions, chicken and pork fats from the pot.  Place mushrooms in a plate. Pour half portion of sauce over it.  Reserve the remaining sauce for another recipe.
