Kombu Stock Recipe

(Water Stock of Kombu)

Ingredients:   Makes 3 cups

2 pieces kombu 6x2inch (15x5cm)

3 cups water

 

Method:

Wipe the kombu with a dry cloth to remove dirt and sand.  Soak in water for 1 hour and strain through cheesecloth.  In summer and for daily use, keep it in the refrigerator overnight.
