Kimizu Recipe

(Japanese Salad Dressing Recipe)

Ingredients:   Makes about 1¼ cups

3 egg yolks

¼ teaspoon salt

1 tablespoon sugar

3 tablespoons white vinegar

¾ cup water

1 tablespoon corn flour

1 teaspoon prepared wasabi or mustard

 

Method:

Put all ingredients into container of electric blender and blend until smooth, about half a minute.  Pour into a small saucepan and cook over very low heat, stirring constantly with a wooden spoon, until mixture thickens and coats back of spoon.  Do not allow it to approach simmering point or it will curdle, and keep stirring until it is half cool.  Chill and serve with sliced raw or crisp-cooked vegetables as a salad.
