Kakitama-Jiru Recipe

(Japanese Recipes - Egg Flower Soup Recipe)

Ingredients:   Serves 4

5 cups dashi or chicken stock

8 snow peas or ¼ cup sliced celery

2 tablespoons Japanese soy sauce

2 eggs

½ teaspoon salt

 

Method:

Bring stock to the boil and add snow peas, strings removed, or the sliced celery.  Cook for 1 minute after liquid returns to the boil, then add soy sauce.  Beat eggs slightly with salt and pour slowly into boiling stock, stirring gently.  Ladle into soup bowls and serve immediately.
