Chicken Vegetable Soup Recipe

(Japanese Recipes - Kenchin-Jiru Recipe)

Ingredients: Serves 6

4 dried shiitake mushrooms

7 cup dashi or chicken stock

1 small carrot

1 stalk celery

half a giant white radish

½ cup chicken meat, diced small

salt to taste

 

Method:

Soak mushrooms in very hot water for 30 minutes, then discard stems and cut mushrooms into thin slices.  Put into pan with stock, cover and cook for 10 minutes.  Cut carrot, celery and radish into fine matchstick strips and add to pan with chicken.  Cook for 5 minutes, taste and correct seasoning.  Serve hot.
