Lamb Curry Recipe

(Indonesian Recipe)

Ingredients:  Serves 4

2-3 tablespoons margarine

5 cloves garlic, finely sliced

10 shallots, finely sliced

5cm cinnamon stick

2 cardamoms

½ nutmeg, bruised

1 stalk lemon grass, bruised (use only the bottom white tender part)

3 kaffir lime leaves

1-2 pieces dried sour fruit (Garcinia cambogia)

1kg lamb, cut into 3 x 3 cm pieces

700cc thin coconut milk

200cc thick coconut milk

300g potatoes, halved or quartered

salt to taste

 

Spices (roasted and ground):

1 tablespoon coriander

½ teaspoon cumin

¼ teaspoon aniseed

½ tablespoon peppercorns

3 cloves

 

Method:

Heat margarine and sauté garlic and shallots until golden brown.  Add ground spices, other spices and herbs and meat.  Continue to fry for a few minutes, then add thin coconut milk.  Simmer until the meat is half-cooked.  Add thick coconut milk, potatoes and salt.  Cook and stir from time to time until the ingredients are cooked and the gravy has thickened.
