Jemput Pisang – Mashed Banana Fritters Recipe |

2 eggs 30 g sugar 1/4 teaspoon salt 120 ml coconut milk, squeezed from 1/2 grated coconut with sufficient water added 5 medium bananas (rastali variety), mashed Cooking oil for deep-frying Ingredients to be sifted together: 120 self-raising flour 30 g corn flour (cornstarch) 1 teaspoon baking powder |
Method: Whisk eggs and sugar until light and fluffy. Add salt and fold in sifted ingredients with coconut milk. Add mashed bananas and mix well. Heat oil in a deep frying pan until medium hot and fry tablespoons of batter until golden brown, stirring constantly so that it will not burnt. Drain well on paper towel before serving. |
