Fish Maw Soup Recipe

Ingredients: Serves 4

80g fish maw

150g minced pork

8 cups chicken stock

1 egg, beaten

1 stalk leek, sliced

1 stalk coriander leaves, diced

1 stalk scallion, diced

 

Marinade:

a little salt, pepper, sesame oil and cornstarch

 

Method:

Season the minced pork with the marinade for few minutes.  Soak fish maw in hot water until soft, wash and drain.  Cut in small sections, stuff in the minced meat.  Bring the chicken stock to boil, add in stuffed fish maw.  Cook for 20 minutes, then season with pepper and salt.  Lastly stir in the beaten egg slowly and garnish with leek, scallion and coriander leaves when serve.
