Cod Fish with Barbecue Sauce Recipe

Cod Fish with Barbecue Sauce Recipe

Ingredients:

250 g cod fish, cut into 4 slices

Salt to taste

Pepper to taste

2 tablespoons cooking oil

Barbecue Sauce:

1 teaspoon brown bean sauce (tau cheo)

1 teaspoon sesame paste (also known as tahini)

1 tablespoon sugar

1 teaspoon chicken stock granules/powder

½ teaspoon sesame oil

1 teaspoon cooking oil

10 g garlic, sliced

100 g chicken stock

Method:

Rub the cod fish with salt and pepper, and leave to marinate for about 30 minutes.  Heat 2 tablespoons oil in a wok and fry the cod fish until it is ¾ cooked.  This should take approximately 2 to 3 minutes.  Remove the fish, drain off excess oil and set it aside on a plate.

Combine the barbecue sauce ingredients and mix well.  Set aside.

Heat 1 teaspoon of cooking oil in a preheated wok.  Add the garlic slices and fry until fragrant.  Add in the chicken stock and the barbecue sauce ingredients.  Mix well and bring to a boil.  Once the sauce has boiled, remove it from the fire.  Serve the cod fish with sauce.
