Macadamia Shortbread Recipe

Ingredients:

210g self-raising flour

¼ teaspoon bicarbonate of soda

a pinch of salt

225g butter

100g castor sugar

¼ teaspoon vanilla essence

1 egg yolk

30g chocolate chips

30g macadamia nuts (chopped)

25g coarsely chopped macadamia nuts

 

Method:

Cream butter, sugar, essence and egg yolk until light and creamy.  Sift in flour, bicarbonate of soda and salt.  Stir in chopped macadamia nuts and chocolate chips to mix.  Divide dough into two equal portions.  Roll out each piece of dough between two nonstick parchment paper to 0.5cm thickness.  Use a fluted spring form pan to press out a round.  Mark into 8 equal wedges and with a fork lightly press the surface.  Transfer the round to the baking tray.  Lightly brush with egg wash and sprinkle with extra chopped macadamia nuts.  Bake in preheated oven at 190°C for 20 minutes or until golden brown.
