350g good-quality bittersweet chocolate,
broken up in pieces
250g unsalted butter
¼ cup plain flour
1 teaspoon baking powder
3 eggs, beaten
1 cup sugar
100g walnut nuts, coarsely chopped

Method:
Lightly butter a baking tray. Line
base with baking paper. Melt chocolate and butter in a bowl set
over a pot of simmering water. Once melted, remove from heat and
set aside to cool slightly. Sift flour and baking powder into a
bowl. Set aside. Using an electric mixer, whisk eggs until
thick and creamy. Add sugar gradually while whisking, until the
mixture is thick and mousse-like. Gently fold in the chocolate
mixture in batches, alternating with the flour. Fold in the
nuts. Spoon brownies mixture into prepared try. Bake in
preheated oven for 40-45 minutes. The top is crusty, but the
center of the brownie remains moist and gooey. Remove from oven
and allow to cool in the tray. To serve, cut brownies into
squares and remove from tray.
