German Cheese Tarts Recipe

Ingredients for Tart Pastry:  Preheat oven to 180°C

200g superfine flour

40g icing sugar

15g milk powder

10g grated parmesan

120g butter

30g egg

 

Filling:

10g milk powder

25g cornflour

60g sugar

60g egg yolks

200ml milk

200g cream cheese

1 tablespoon lemon juice

 

Method:

To make the Tart Pastry:  Sift superfine flour, icing sugar and milk powder together.  Add cheese, egg and butter.  Stir into a dough.  Set aside for 30 minutes.  Press the dough into the tart tin.  Bake in preheated oven for 10-15 minutes or until tart crust is halfway done.  To make Filling: Stir milk powder, cornflour, 30g sugar and egg yolks together until well combined.  Pour in milk and mix well.  Cook over low heat until thick.  Blend cream cheese and 30g sugar until lump-free.  Stir in the egg mixture gradually and add lemon juice and combine.  Pour the filling into tart pastry and bake at 150-160°C for 20-25 minutes.
