Method:
To make the Tart Pastry: Sift
superfine flour, icing sugar and milk powder together. Add
cheese, egg and butter. Stir into a dough. Set aside for
30 minutes. Press the dough into the tart tin. Bake in
preheated oven for 10-15 minutes or until tart crust is halfway done.
To make Filling: Stir milk powder, cornflour, 30g sugar and egg yolks together until
well combined. Pour in milk and mix well. Cook over low
heat until thick. Blend cream cheese and 30g sugar until lump-free.
Stir in the egg mixture gradually and add lemon juice and combine.
Pour the filling into tart pastry and bake at 150-160°C for 20-25
minutes.
