Doughnut Recipe

Ingredients:

340g bread flour

80g fine granulated sugar

1 teaspoon baking powder

10g instant yeast

200ml cold water

160g cake flour (low protein/gluten flour)

1 teaspoon salt

15g milk powder

100g eggs

60g shortening

 

Method:

Place all the ingredients (except shortening) in a mixing bowl and use a dough hook to knead for 3 minutes.  Add in shortening and knead for another 10 minutes or until dough is well developed. Then let the dough rest for 15 minutes or more before rolling and cutting with a doughnut cutter.  Place in a floured pan and allow to rise for 1½ to 2 hours before frying in a slow fire.
