Coconut Tarts Recipe

Ingredients for Crust:  Preheat oven to 150°C

300g plain flour

70g icing sugar

150g margarine

20g milk powder

1 egg

 

Ingredients for Coconut Filling:

250g fresh grated young coconut (white part of flesh only)

100g castor sugar

½ tablespoon ovalette

2 tablespoons margarine

1 egg

½ tablespoon milk powder

1 tablespoon custard powder

½ teaspoon salt

 

Method:

To make crust, mix icing sugar and margarine, add in egg, stir well.  Next, blend in plain flour, knead until become a dough, wrap with cellophane paper.  Chill in the fridge for 30 minutes.  To make filling, combine castor sugar with ovalette, salt and margarine, then add in coconut, egg and the remaining filling ingredients, mix well.  Divide the crust dough into small portions, press it into the tart mould, then spoon in coconut filling mixture and press lightly.  Bake in the preheated oven for 30 minutes or until golden brown.  Remove, serve.
