250g unsalted butter
150g castor sugar
1 egg
240g cake flour
1 teaspoon bicarbonate of soda
100g toasted desiccated coconut
150g chocolate chips
Method:
Beat butter, sugar and egg until 60% fluffy. Fold in sifted flour, soda, desiccated coconut and chocolate chips, mix until a dough is formed. Drop teaspoon of dough onto baking tray. Bake in preheated oven at 170°C for 20 minutes.
