Classic Digestive Crust Recipe

Ingredients: Enough to make a 9-in round crust

160g digestive biscuits

1½ tablespoons light brown sugar

80g butter

 

Method:

Wrap a springform pan with a layer of aluminum foil.  Place on a baking tray and set aside.  Break digestive biscuits into a large chunks.  Place in a blender and pulse until finely ground.  Transfer to another bowl and stir in brown sugar until well mixed.  In a microwave oven, warm butter at medium power until completely melted and smooth.  Pour warm butter over digestive mixture.  Toss well to coat mixture with butter.  Transfer mixture to prepared pan.  With your hands (you may wish to wear disposable gloves), press firmly into an even layer on the bottom of pan.  Refrigerate for at least 1 hour before using.  For digestive crust with nuts:  Jazz up the crust by adding lightly toasted chopped walnuts, pistachios, pecans, macadamias or sliced almonds.  For a 9-in round crust, mix 3½ tablespoons of your preferred nuts together with ground digestives and brown sugar.  Proceed as directed above.
