Chocolate Souffle Recipe

Ingredients:  Preheat oven to 190°C

2 egg yolks

3 egg whites

¼ teaspoon cream of tartar

20g sugar

20g butter

15g superfine flour

130ml milk

50g melted chocolate

 

Method:

Melt butter over low heat.  Pour in flour and cook for 1 minute.  Remove from heat.  Pour in milk and mix well.  Bring to the boil again.  Add chocolate and mix.  Remove from heat and leave it to cool.  Fold in egg yolks.  In a separate bowl, beat egg whites, sugar and cream of tartar until soft peaks form.  Add egg yolk mixture and fold in well.  Spoon the mixture into greased souffle dish.  Bake in preheated oven for about 20-25 minutes or until done.  Serve immediately.
