Chocolate Mayonnaise Cake Recipe

Ingredients:  Makes a 20 x 13cm loaf pan cake  (Preheat oven to 170°C)

280g self-raising flour, sifted

30g cocoa powder, sifted

2g instant coffee granules

¼ teaspoon coffee emulco

¼ teaspoon chocolate emulco

½ teaspoon buttermilk essence

195g soft brown sugar

30g ground almonds

1 egg

185g water

1 tablespoon melted butter

155g mayonnaise

 

Topping:

160ml whipping cream

40ml milk

200g dark chocolate, chopped

1 tablespoon Kahlua coffee liqueur (optional)

 

Method:

Line a 20 x 13 cm loaf pan with non-stick parchment paper.  Put all ingredients into a mixing bowl and mix until creamy and smooth.  Pour batter into prepared pan and bake in preheated oven for an hour or until cooked through when tested with a wooden skewer.  Leave the cake to cool in the pan.  Topping: Heat cream and milk over gently simmering water then add chocolate.  Stir until smooth.  Remove from heat and add coffee liqueur (optional).  Pour the chocolate topping over the cooled cake.  Grate some white chocolate shavings over the cake.  Refrigerate the cake well before serving.
