Chocolate Chip Cupcakes Recipe

Ingredients:  Makes 20 cupcakes

250g butter

300g brown sugar

½ teaspoon vanilla essence

½ tablespoon instant coffee powder

  (dissolved in ½ tablespoon hot water)

4 whole large eggs

320ml water or milk

200g chocolate chips

100g macadamia nuts (toasted and chopped)

20 paper cups

1 piping bag

 

Ingredients to be sifted together:

280g cake flour

70g cocoa powder

1½ teaspoons baking powder

¾ teaspoon baking soda

½ teaspoon salt

 

Method:

Preheat oven to 180°C.  Beat butter, sugar, essence and coffee powder until light and creamy.  Add in eggs one at a time.  Add in dry sifted ingredients alternating with water.  Lastly, add in nuts and chips, scoop the batter into a piping bag (with holes big enough for the nuts and chips to go through).  Pipe mixture into paper cups about ¾ full and arrange on baking trays.  Bake in preheated oven for approximately 30-35 minutes.  Decorate with icing sugar or as desired.
