Cashew Nut Cookies Recipe

Ingredients:

450g low protein flour (sieved)

150g icing sugar

2 nos. egg yolk

250g butter

100g cashew nuts + some for inserting into the dough

1 teaspoon baking powder

 

Method:

Chop cashew nuts in a chopper (not too fine).  Beat butter and icing sugar until fluffy.  Add in egg yolk and mix well.  Fold in low protein flour, baking powder and cashew nuts until well mixed.  Divide dough into 15g each.  Knead dough into chili shape.  Insert 1 cashew nut on it.  Place on greased baking tray, brush on a coat of egg yolk.  Bake in a preheated oven at 160°C for 15-20 minutes.
