Black Walnut Torte Recipe

Ingredients:  Makes one 9-inch round cake (Preheat oven to 180°C)

7 egg whites

150g fine granulated sugar

190g ground almonds

3 tablespoons cornstarch

2 tablespoons cocoa powder

¾ teaspoon cream of tartar

80g toasted walnuts

 

Chocolate Ganache:

250g cooking chocolate

100g double cream

(Warm double cream over double boiler,

   remove from heat and add in cooking chocolate)

 

Method:

Mix together ground almonds, cornstarch and cocoa powder.  Whisk egg whites and cream of tartar and sugar until stiff.  Fold in dry ingredients.  Pour into 3 - 9" x 1½" trays and bake in preheated oven until firm and reduce to 150°C for an hour or more.  Sandwich the three layers of meringue with ganache cream and decorate with whipping cream.
