Method:
To make filling: Peel, core and cut
apples into small pieces. Mix all the ingredients and set aside.
To prepare pastry: Combine high gluten flour, superfine flour, egg
yolk, salt, oil and water. Work into dough. Divide into
three portions. Brush oil on the surface. Set aside for at
least an hour. Sprinkle flour on the dough. Place the
dough on a piece of cloth. Roll it out into a 10-inch circle.
Stretch the pastry with hands until thin and transparent. Brush
melted butter on the surface. Spoon apple fillings along one
long edge of the pastry. Fold the pastry to cover the filling.
Using the cloth as a guide, roll up from the bottom into an elongated
shape. Bake in preheated oven for 25-30 minutes. Cut and
Serve.
